While the Benedictine monk did not invent Champagne – and probably did not say "Come quickly, I am tasting the stars" – Dom Pierre Pérignon’s innovations led to the ephemeral delight we drink today. His goal then, as it is now, was to create "the best wine in the world".
Members will be able to sample these Champagnes in all their variety during this wine-pairing dinner. Vintage 2005 – a wine of strong character with a spicy, flowery finish – will be served during the pre-dinner cocktail, hosted by Dom Pérignon Brand Manager Guillaume Cibin. Throughout the dinner, a 2006 vintage and two rosé vintages, 2003 and 2004, will be served, each a different elaboration of the wine. Two other exceptional wines will be served, both "Plénitudes of Dom Pérignon", truly exceptional years. The first is the 1998 P2, characterised by a creamy aromatic persistence; the second is the 1995 P2 Rosé, a radiant and elegant wine.
Chef Shaun Anthony has created an equally elegant menu for this occasion, a wonderful way to welcome summer.
