Bordeaux red wines and beef are traditionally excellent partners. For one memorable evening at The Derby Restaurant, Members will be able to enjoy the exquisite combination of old vintages from Château Clinet – one of the most prestigious estates in the Pomerol AOC on Bordeaux’s right bank – and specially aged beef from Paris’ Boucherie Polmard.
The dinner will be hosted by Château Clinet CEO Ronan Laborde, with the presence of Éléveur Boucher (breederbutcher) Alexandre Polmard. They will introduce and explain the wines and special cuts of beef respectively.
Both Château Clinet and Boucherie Polmard are family-owned businesses. M. Polmard’s “hibernation” technique produces the world’s most expensive and exclusive cuts of beef. M. Laborde will be opening some outstanding vintages from his private cellar, including the 1988 and 1995 in magnum format.
The Merlot-dominated wines of Château Clinet are renowned for their finesse and exquisite balance, and are sometimes compared to those of the star of the Pomerol Plateau, Château Pétrus.
